I love fruit smoothies, but I am adding more vegetables to my smoothies lately. They are nutritious and add such interesting flavor and color to a drink. I often add a little kale or spinach, but there are so many other vegetables to try. They are a tasty addition, so add vegetables.
recipe for beet vegetable smoothie
Ingredients:
2 small beets (I don't peel them, but wash them thoroughly)
1 yellow mango
1 banana
1 whole orange, peeled
1 cup blueberries
1/2 lemon
1 large kale leaf
Place all ingredients into a blender jar. Add 1 cup of crushed ice and a little water if you desire. Blend until desired consistency. Enjoy
*optional: 1 cup of cherries and a stalk of celery are good in this smoothie also.
Beets are an excellent source of folate. If you eat the beets raw, you get more folate than if you cook them. They are good for detoxification and are an antioxidant and an anti-inflammatory.
They are a source of fiber, manganese and magnesium, potassium, vitamin C, iron and vitamin B-6
It is not a good idea to eat beats if you suffer from kidney stones as beets are high in oxalates.
There are other vegetables you can add. Ginger adds good flavor and nutrition. Turmeric is good as an antioxidant and is said to help soothe arthritis pain or other pain. What vegetable do you add to your smoothies?
